Vegan casserole “monastery style”

Постен манастирски гювеч рецепта
Ingredients for 4 portions:

4 potatoes
1 cup rice – 120 g
6 tbsp. oil
1 cup chopped peeled tomatoes – 200 g
1 bay leaf
black pepper if desired
1/2 tsp. savory
the white part of one sprig of leek
1 tsp salt
100 g olives
2 garlic cloves
1 tsp vinegar

Method of preparation:

1. Wash the rice thoroughly, put it in a pot and pour in 500 ml of cold. Leave it on the stove for 20 minutes.

2. Cut the potatoes into small cubes, place them in a casserole dish and drizzle with the oil. Add salt and mix well.

3. Cut the leek into small pieces and add to the potatoes along with the drained rice, tomatoes, olives, bay leaf and savory.

4. Pour in 300 ml of cold water. Close the casserole and put it in a cold oven. Heat up to 160℃. Bake for 60 minutes from the moment the temperature reaches 160℃.

5. Crush the garlic and mix with the vinegar and 1 tbsp. water. Pour this mixture on top of the already prepared dish. It can be served cold as well.
