„Apratsi“ – vegan sauerkraut sarmi with Rhodope rice from the village of Momchilovtsi

Апраци - постни зелеви сарми с ориз по родопски от с. Момчиловци
Ingredients:

15 pcs. Arte sauerkraut leaves

250 g Arte rice

1 onion

1 tsp dried jojen (mint)

1/2 tsp ground cumin

black pepper to taste

1 tsp paprika

6 tbsp oil

Method of preparation:

1. Add the finely chopped onion and spices to the pre-washed rice and mix well. At the bottom of the pot, put the stalks of the dry jojen and cover with 2-3 sauerkraut leaves.

2. Each sauerkraut leaf is cut into three equal parts. Put 1 tsp of the rice in the middle of each cut leaf. Roll them into small pocket-like tight piece. Arrange them in the pot, pour oil and lukewarm water on top, enough to cover them.

3. Arrange sauerkraut leaves on top, press with a plate and cook over low heat.
