Fried polenta with cheese
Boil the polenta in salted water (the is ratio: 1 part polenta and 2.5 parts water). Stir constantly until it starts to come off the sides of the pot.

2. Remove it from the heat and add the shredded white cheese. Stir vigorously until almost all of the cheese melts.
3. Grease a tray and spread the polenta on top of it in order to cool down. Afterwards, add the egg and mix until a homogeneous mixture similar to minced meat is reached.
4. Shape the polenta into balls with the help of a little oil placing a few cubes of yellow cheese in the center of each one.
5. For the breading: beat the eggs and cover the already prepared polenta balls in breadcrumbs first, then in the egg mixture, and finally fry them for 2-3 minutes in hot oil, turning occasionally.
