Baked beans with pork and bacon

Кюфтяна яхния - яхния с кюфтета с ориз и сос от зеленчуци и нахут.
(For 5 servings)
Ingredients:
За кюфтетата:
  • 1 package ARTE beans
  • 1/2 kg pork – neck or shoulder
  • 200 g bacon
  • 3 tomatoes
  • 2 onions
  • 2 carrots
  • 2 stalks celery
  • 5 sprigs fresh parsley
  • 1 tsp dry jojen (mint)
  • 1 tsp savory (chubritsa)
  • 1 tsp sweet red pepper
  • 4 tbsp oil
  • salt and black pepper to taste

Method of preparation:

1. Soak the beans in cold water and let them swell overnight. Then drain them, pour some cold water into the pot with the beans and put them on the stove to boil. Drain the water from the beans again and pour 2 liters of cold water. Cook them for about 40 minutes until soft, after they start boiling. You can also use the different types of ARTE canned beans to save time on cooking if you are in a hurry. In this case, skip this first step. 

2. Cut the pork into cubes (2-3 cm) and transfer it to a bowl. Salt it with half a teaspoon of salt and season it with ground black pepper to taste.

3. Cut the onion finely, the carrots into rings and the celery into small pieces.

4. Pour oil into a deep pan and let it heat up. Add the onion, meat and carrots. Fry for 4-5 minutes on high heat. Sprinkle with the red pepper and celery. Mix well and pour it in the pot with the softened beans. Add 1 tsp salt. Boil for about 30 minutes. Finally, season with jojen, savory and finely chopped parsley.

5. Cut the bacon into slices. Place half of the slices on the bottom of 5 casserole dishes or on a large baking dish. Put the boiled beans with meat on top. Cut tomatoes into rings and cover the beans with them. Then cover with the rest of the bacon. 

6. Bake in an oven, preheated to 180 degrees for about 30 minutes, until the tomatoes are baked well.
