Ivan Zvezdev’s recipe for the classic Bulgarian dish drob sarma

We are sharing Ivan Zvezdev’s recipe for the classic Bulgarian dish drob sarma, but with an interesting addition - canned mushrooms by ARTE. Also, the rice he is using is, of course, Baldo by ARTE. Prepare this wonderful spring dish now!

Ingredients:
  • 1 set of lungs, kidneys and heart
  • 2 green onions
  • 180g (1 cup) Baldo rice by ARTE
  • 1 tsp salt
  • 200g chopped tomatoes
  • 5 tbsp oil
  • 1 tsp dried mint
  • 400g (1 jar) canned mushrooms by ARTE
  • 2 bay leaves
  • Grains of black pepper
  • Black pepper to taste
For the topping:
  • 2 eggs
  • 1 tbsp flour
  • 200 g yogurt

Directions

  1. 1. Put the cleaned lungs, kidneys and heart in a saucepan with cold water, add the salt, two bay leaves, a few grains of black pepper and cook them for 30 minutes after the water starts boiling. Meanwhile, periodically “foam” the broth.

    2. Heat the oil in a pan, add the chopped onion and cook shortly.

    3. Add the washed and drained rice to it and cook again for no more than 1 minute.

    4. Then add the tomatoes and the chopped lungs, kidneys and heart.

    5. Pour in about 400 ml of the broth.

    6. Finally, add the canned mushrooms (cut them if they were whole).

    7. Transfer the drob sarma to a tray and add the spices – the mint and pepper to taste.

    8. Bake the dish at 180 degrees Celsius in a preheated oven for 20-30 minutes.

    9. Prepare the topping by mixing all the necessary ingredients.

    10. Pour it over the drob sarma and bake for another 20 minutes at 180 degrees.
